Carboxy Methyl cellulose (CMC) is a cellulose derivative with carboxymethyl groups (-CH2-COOH) bound to some of the hydroxyl groups of the glucopyranose monomers that make up the cellulose backbone. It is also called as CMC, Carboxymethyl. Cellulose Sodium, Sodium salt of Caboxy Methyl Cellulose. CMC is one of the important water solube polyelectrolyte. It can soluble in water, insoluble in alcohol, ethanol, benzene, chloroform and other organic solvents. Resistant to animal and vegetable oils and not effected by illumination. It is used in food science as a viscosity modifier or thickener, and to stabilize emulsions in various products including ice cream.
